~ Honey Grilled Shrimp~

For dinner I made Honey Grilled Shrimp which was great with baked potatoes and the Beer Bread I made as well.
 
 What you need: 1 lb shrimp shelled, water and skewers.
 
In a large bowl, mix together the contents of large bag with 1/3 cut water. Add shrimp, toss to coat, cover and marinate in the refrigerator for an hour. I thought I took photos of the shrimp in the marinade but I guess I didn't.  Sorry..
 
Preheat grill to high heat. Thread shrimp onto skewers and discard marinade.
 
In a small bowl, stir together second package with 1/4 cup water.  
 
 Set aside for basting.
Lightly oil grill grate. Grill shrimp for 2 to 3 minutes per side, or until opaque. Baste occasionally with the honey-butter sauce while grilling. Shrimp can also be skillet grilled as well, and if so, do not use the skewers.  I grilled my shrimp in a cast iron skillet not the grill and they turned out fine!
 
After putting on our dinner plate, I drizzled more of the honey-butter sauce over top.  The shrimp with the beer bread and potatoes made for a really great dinner with very little effort!  Get some today! 

~Beer Bread~

Today I made an easy delicious Beer Bread to have with dinner as I was making Honey Grilled Shrimp too and wanted a fancier Sunday dinner.  This only required the bread mix and beer so I had all the ingredients.
 
 What you need:  Beer Bread mix, 12 oz can of beer or clear carbonated soda.  I used a 12 oz bottle of beer instead and it worked just fine!
 
 Instructions: Mix contents of package with 1 can (I used a bottle) of beer.
 
 Here it us all mixed up.
 
 Pour into greased9 x 5 loaf pan and bake at 350 degrees for 50 minutes.
 
 Here it is fresh out of the oven.
 
 
It was so good, we had to try a couple of slices it smelled too good to wait for dinner. Get some today!

~ Diabetic Friendly Carrot Souffle ~

I've been wanting to try this and decided to make it to have with dinner.  Hubby loved it too! That's when I knew it is a keeper!
 
 
Ingredients: 1 pound of carrots, Carrot Souffle mix, 2 eggs and 1/4 cup melted butter.
 
Instructions: Preheat oven to 350 degrees. Bring a large pot of water to a boil. Add 1 pound of chopped carrots and cook until tender.  (I myself just used enough water to cover the carrots, why use a ton of water that can just wash away some of the nutrients in the carrots?. This way I only had to drain less than a cup of water off).
 
Drain and mash. (Here I already added the butter too).
 
To the carrots add 1/4 cup melted butter ,2 eggs and contents of package. Mix well and transfer to a 1 quart casserole dish. (I transferred them into two one pint casserole dishes). Bake in preheated oven for 30 minutes.
 Here's the finished Souffle. Pretty fancy looking huh?
 
Light, moist, delicious!  A nice side to impress guests with!

~ Cajun Creole~

I made Cajun Creole tonight.  Here is the original blog from when I first made it.
 
This time I just made it with shrimp though and did not add sausage.
 
 
I also only used about 1/2 cup of water as opposed to a cup and a half so that it was more of a sauce on top of the rice and not something that had to be eaten out of a bowl.  It was good!
 
Plate up!  Get some today!

~ Fluffy Oatmeal Cinnamon Pancakes ~

This morning I made Oatmeal Cinnamon Pancakes.  They were yummy, but filling!  I couldn't finish the small stack (of 3 that I had).  And I have enough batter left to make them again tomorrow. 

Ingredients: Oatmeal Cinnamon Pancakes mix, 2 eggs, 1/3 cup oil, 1 cup water




Directions: Preheat a lightly greased griddle over medium low heat. Place the contents of package in one bowl and beat together eggs and oil in another bowl



I used only half the mixture, so I used 1/2 cup water, 1/6 cup oil (2 Tablespoons +2 teaspoons), and 1 egg.  Pour eggs and oil into pancake mix, alternating with water.




Mix thoroughly.
Place 1/2 cup batter onto hot skillet.  I made 3 pancakes for myself.
 

  Flip when bubbles appear and brown the other side.  Add 3/4 cup of raisins, cranberries or chocolate chips to prepared batter for an extra treat.  I didn't add anything extra this time.

Yummy melted butter and honey for syrup.  Delicious! And I have enough mix to make more next time from the same bag!
