~ Kung Pao Chicken ~

This is the first time I have ever made this any kind of Kung Pao Chicken, and it was GREAT!  The sauce was so incredible I couldn't get enough of it, kept dipping every BITE! :)



Ingredients: Kung Pao Chicken mix, Olive Oil, Rice Vinegar, Water, that's it!


 Directions: Take the small package out of the mix and set aside. Make the marinade by combining contents of large bag with 1/2 cup olive oil and 3 Tbsp rice vinegar. Place in large, gallon size re-seal able bag. Cut up 3 chicken breasts into bite size pieces and place inside the bag with marinade. Shake to coat and refrigerate for 1 hours.

Make the sauce by combining contents of small bag with 2 Tbsp of rice vinegar and 1/4 cup plus 1 Tbsp of water ...

...in a small saucepan over medium heat. (I wait until chicken is ready to cook for this step). When mixture begins to bubble, reduce heat and simmer for 10 minutes.

Right after I get the sauce starting to cook, I am ready for the chicken.

Discard marinade from chicken. Cook chicken pieces in skillet or on grill until cooked through. I imagine this is YUMMY on the grill but I just did this on the stove.

Serve chicken drizzled with sauce.  I forgot to take the final picture as we were anxious to chow down!

~ Fried Rice ~

Nothing like Fried Rice to satisfy your appetite! It is part of our Asian Cuisine selection

Here is all you need, The Fried Rice package, and actually per the instructions on the back of the package, just water. I have tried it with water and it is okay but I like to use chicken broth to add even more to it, so I used that instead but it is optional.


Boil 1 and 1/2 cups of water (in my case I used chicken stock)..

add contents of package, stir, cover and let stand 5 minutes until water is absorbed.
 Refrigerate for 1 hour or up to 3 days.  I do mine in the morning and keep in refrigerator until evening dinner making time. Fried Rice cooks better the longer the rice sits in refrigerator.

Heat 1 Tbsp of vegetable oil in wok or skillet. Sir fry the rice for at least 1 minute until browned. Push rice to the side...
scramble 1-2 eggs and then stir into rice (I did it separately and added it to the rice above). If desired, add 1 cup of cooked peas and/or carrots.

This is easy and fun to make! I just made it my main meal with 2 egg rolls on the side. Yum!!

This blog will feature mixes/dishes/desserts/dinners that I make that are featured on my website SouthernBelleGourmet.com.  I will provide photos along the way to show how to create wonderful dishes just by using these easy mixes!

I became a representative for Gourmet Cupboard a year ago because I have tried many of the products and just love the fact that the gourmet food mixes are all individually handmade in southeast Texas and most contain no preservatives, MSG or chemicals. Each mix includes all of the dry ingredients; you simply add one or a few other ingredients and mix or cook and serve. 

This meant a lot to me, to know that the products are not put together at some large factory where who knows what preservatives and other things can get into the packaging before leaving the plant. The mixes are fresh, taste great and makes meal time so convenient!
